Very yummy cupcake biscuits!

Cupcake Biscuits

You Will Need:
A cupcake shape cutter,
1 Egg yolk,
175g plain flour,
100g butter,
85g icing sugar,
1 tsp vanilla extract,

To Decorate:
Piping bags,
Silver shimmer spray,
Pink, blue and green food colouring,
100g icing sugar,

Method:
Firstly, in a food processor, add the flour, butter, sugar, vanilla extract and egg yolk, with a touch of cold water. This will create a sticky dough. Remove the dough, and put in onto a lightly floured surface. Knead it for 1 minute until wrapping it in cling film and putting it in a fridge to chill for at least 20 minutes.

Whilst the dough is chilling, put the oven on at 180C/160C fan/gas 4. Take the dough out of the fridge and roll it out into a thickness of a £1 coin. With the cupcake cutter, cut out as may cupcakes as you can, by re-rolling the trimmings. It should make roughly 20 biscuits. Put the biscuit dough cutouts onto a greased baking tray and bake for 12 minutes or until lightly golden. Don’t put the biscuits too close to each other incase they grow in the oven. Leave the biscuits to cool before the next step.

Mix the icing sugar with the water in a bowl, and then separate that mixture into 3 separate bowls. Then add the food colouring to each bowl. So you will have a bowl with pink icing, blue icing and green icing. Put the icing into the piping bag and decorate the way you wish. I did a variety of different patterns on the cake-biscuits, as you can see.

When finished, I sprayed it with a silver shimmer spray, which just adds a gorgeous glace (and shimmer obviously), to the whole biscuit which just makes them look too cute to eat!
